Chicken Tacos with Lime-Cilantro Crema
This was awesome!
I tweaked the recipe a bit.
1) I cubed the chicken and soaked it in the juice of a 1/2 Lime, 1/2 Lemon, and 1/2 of an Orange.
2) When I cooked the chicken I just dumped it all in the pan with the citrus juice and used about 3 Tbs of McCormicks Taco Seasoning.
3) I used 5 chicken breasts.
The Lime-Cilantro Crema was a hit.. and adds such a nice flavor to the taco. I put a nice spread of it on my tortilla and then added my chicken and toppings.

Red Wine Pot Roast with Honey and thyme
We did this tonight and it turned out very nice. I made gravy out of the liquids and drippings and it was a hit. Gravy with a sweetness of Honey was different but very good.
I don’t have a big oven safe Dutch Oven so I used my big Cast Iron Skillet and then wrapped it in foil instead of a lid and it worked.
We will do this one again.

Well this one did not go so well. The wine left a strong flavor that we did not like.
If I do this one again it will be with less wine and maybe a sweeter wine. We used a Merlot.

Prime Rib with Thyme Au Jus

We did another favorite. Turns out good every time. Link is below to the recipe.
Every once in awhile Prime Rib goes on sale for a good price and we stock up.
I served this with some Twice Baked Potatoes and Steamed Broccoli.
