Every once in awhile Prime Rib goes on sale for a good price and we stock up.
I served this with some Twice Baked Potatoes and Steamed Broccoli.

Beef and Mango Stir Fry with Rice

Our daughter saw this on the Disney Channel a few weeks ago and since she and I are Mango pigs (We love mangos!) we wanted to give it s try.
The kids were not a big fan off the Orange flavour that came from the Orange peel in the recipe. I may skip that next time.
The only other suggestion I would make is to make sure your Mango’s are not to soft, they will get soft quickly when you add them in.

Boneless Pork Loin Chops with Shallot and Apple Cider

Here is the link to the video on Big Oven in case you want to watch it. This was a big hit and I served it with some Salad. No left overs, it was all gone.
We did not have Center Cut Pork Chops so I cut a Pork Loin into 1 inch medallions and used that.
Pre-Heat Oven to 375.
Ingredients:
Pork 4 - 5 Chops
1 1/2 cup Shallots cut a crossed the grain
1/4 Cup Apple Cider Vinegar
2 Cups Apple Cider (get some good stuff)
1Tbl butter
Salt and Pepper
Optional - Thyme or Rosemary
Instructions:
1) Season the Chops on both sides with some salt and pepper
2) In a heavy pan (Oven Safe if you have one). Sear the Chops on both sides till they are nice and brown. I used some Garlic Olive Oil to sear them in.
3) Add the Shallots and stir them around with the chops and de-glaze thr pan some.
4) Place the pan in the oven at 375 deg for 8 to 10 min or until desired results.
5) Remove Pan and remove chops from the pan and set aside.
6) On a high heat (or Med for Al-Clad), Add the Vinegar and Apple Cider. De-glaze the pan
7) Reduce the liquid to a nice sauce.
8.) Turn off heat and add the 1Tbl butter and stir around till its melted.
9) Salt and Pepper to taste and the Thyme or Rosemary if you wanted.
10) Add the chops back in and roll them around to get a good coat.
11) Serve the chops with the sauce and shallots drizzled over the top.

Catching up on the Nephew Front.

I have been very slack on updating info on my Nephew which I call DL. He looks so much like Rich the IV at this age its uncanny. So DL is doing well and getting bigger every day. We will see them in Aug and I am looking forward to it very much. Some updated photos are attached.
DL is up tp something!
